Beet Hummus

Beet Hummus

INGREDIENTS

  • 1 can chickpeas - drained and rinsed
  • 1/2 cup whole beets + 2 T juice
  • 1 T tahini
  • 1/4 cup feta cheese
  • 2-3 T olive oil
  • 1-2 garlic cloves
  • 2-4 T lemon juice - to taste
  • 1/4 cup pinenuts - toasted and cooled + 2 T for garnish - chopped
  • 2 T fresh dill + 1 T for garnish - chopped
  • salt and pepper to taste

DIRECTIONS

  1. Place all ingredients in food processor and pulse until smooth or desired consistency. Taste, adjust if necessary, may need to add more lemon juice or salt.
  2. To serve: place on plate or in bowl and garnish with 2 tablespoons chopped pine nuts and dill and a drizzle of olive oil. Serve with crackers, fresh vegetables or pita bread. Will keep in refrigerator up to a week.
