Bacon, Artichoke and Brie Crostini

Bacon, Artichoke and Brie Crostini

INGREDIENTS

  • 1 Artisan baguette - sliced thinly and toasted
  • 1 jar Cook's Pantry artichoke spread
  • 3 slices Applewood Smoked Bacon - sliced thinly and cut into ½ inch pieces
  • 1 wedge Triple Cream Brie - cut into then slices and leave at room temperature

DIRECTIONS

  1. Preheat oven to 400 degrees.
  2. On a parchment lined baking sheet place thinly sliced baguette and brush with olive oil, salt and pepper. Toast in oven until just golden - about 6-10 minutes. Let cool.
  3. In medium skillet cook bacon until desired crispness and then chop into bits.
  4. Cut brie into thin slices.
  5. To assemble: spread a layer of artichoke spread on each crostini, followed by the brie cheese slice and top with a sprinkling of bacon bits and place on serving tray.
