Beets have a rich and mysterious history. They are said to have grown in the Hanging Gardens of Babylon. Remains of beet roots were excavated from Ancient Egyptian pyramids and from Neolithic dig sites in the Netherlands. They appear in Medieval fare and were often used in tarts, pies and stews.

Oranges and Beet Salad with Goat Cheese

This recipe is so delicious it tastes lke spring summer winter and fall all in one bite and once you have it you will never make pork chops another way again, so yummy blahh blahhh.
Oranges and Beet Salad with Goat Cheese

INGREDIENTS

  • 2 cups Cook's Pantry sliced beets - drained
  • 2 navel oranges - zested
  • sectioned and juiced
  • ¼ cup red onion - sliced thinly
  • ½ cup goat cheese
  • ½ cup walnuts - toasted and chopped
  • Arugula

RASPBERRY VINIGRETTE

  • 2 tablespoons raspberry vinegar
  • 2 tablespoons freshly squeezed orange juice
  • 1 tablespoon orange zest
  • 3 tablespoons olive oil
  • ½ teaspoon honey
  • Salt and pepper

DIRECTIONS

  1. Zest 1 orange and put in small bowl. Cut away remaining skin and cut out orange segments directly over a medium bowl. Then juice the remaining orange over small bowl for vinaigrette.
  2. Do the same with the second orange. Add drained beets to orange sections and the red onion, toss gently.
  3. In small bowl with orange zest and juice add raspberry vinegar, honey and salt and pepper. Slowly whisk in olive oil. Taste and adjust seasoning of needed.
  4. To serve, toss beet mixture with raspberry vinaigrette and garnish with goat cheese, walnuts and arugula and serve.

Beet Hummus

Beet Hummus

INGREDIENTS

  • 1 can chickpeas - drained and rinsed
  • 1/2 cup whole beets + 2 T juice
  • 1 T tahini
  • 1/4 cup feta cheese
  • 2-3 T olive oil
  • 1-2 garlic cloves
  • 2-4 T lemon juice - to taste
  • 1/4 cup pinenuts - toasted and cooled + 2 T for garnish - chopped
  • 2 T fresh dill + 1 T for garnish - chopped
  • salt and pepper to taste


DIRECTIONS

  1. Place all ingredients in food processor and pulse until smooth or desired consistency. Taste, adjust if necessary, may need to add more lemon juice or salt.
  2. To serve: place on plate or in bowl and garnish with 2 tablespoons chopped pine nuts and dill and a drizzle of olive oil. Serve with crackers, fresh vegetables or pita bread. Will keep in refrigerator up to a week.
